It looks like millennials, and more specifically Generation Z, are embracing a food trend that replaces animal products with plant-based alternatives. College and university cafeterias are being targets by startups that make fake meat and seafood, because it's where companies expect they'll find the most willing consumers. By 2020, plant-based meat sales are expected to reach $5.2 billion. Generation Z refers to people born between the mid-1990s and mid-2000s, which means the oldest members of this generation are about to graduate college. This group makes up a quarter of the US population and will be 40% of the consumer base by 2020.
